Why port linux to an iPod? Why port to the XBox? I've even seen screens
of linux running on a cash register.

I think the answer to the "why" question is another question. "why not?"

Sure it probably wouldn't serve much purpose at first (but who knows what
could be done once the OS is in place), but I think it's just the
challenge of actually doing it at all.
