Profiles: .cfg files
While Playing Screen: .wps files
Language: .lng files
Fonts: .fnt files

Plugins: .rock files
Firmware: .ajz/.mod files

All are looking in /.rockbox except for Plugins which looks in /.rockbox/rocks.
