Use on like a shift key. When shift+lpay a directory, a menu will ask you if
it is for playlist operation or to rename the folder, in your case, playlist
operation. Then "insert". That's when the question about recursive insert
may be asked.

BTW, if you use the resume option (I coulnd't use the box without it !),
sometime the resuming question is not asked at startup, and the screen shows
the root of the HD. Just press "on" once, and rockbox will ask you.
