(naturally, as soon as you comment, the situation changes)

I noticed that right after a mount, there's a brief window of a few
seconds when I can touch and cat to a file in the jukebox. Not long
enough to copy from my hard drive.

However, there seems to be no problem with copying files from the various
mp3 cd's I've burned. So, I can just cp -R /mnt/cdrom1/* /mnt/archos/ and
the unit never goes all read only on me. It just doesn't like the
multiple hard drive access.
