The MAS35x7 chips used in the Archos (and others) has some RAM for loading
codecs into. The MP3 codec is in ROM (inside the chip), you can load
whatever codecs you want into the RAM.

In context, it is fair to say that the only thing you CAN'T do is stop the
DAC from working with MP3's.
