Hi Ian,

Here's what I do on the iPod Nano to switch firmwares; the amount of
time required might be different on an iPod Video.

To switch to the Apple firmware, I hold the top, menu button for
about 10 seconds. To switch to Rockbox, hold the top and center
buttons (Menu and Select) until some clicks are heard. It will stay
in whatever firmware you selected until you switch to the other one.
