I can't help with your second question, but I can with the first
one. Booting to the Apple firmware and clearing settings are done in
a similar way; the question is timing. If you turn Hold on
immediately after pressing Menu and Select, the Apple firmware
loads. If you wait until Rockbox starts to load and then turn Hold
on, settings are cleared.
