I have an iriver h140 and I do exactly what you describe using rockbox.
It has an internal microphone and also a 3.5 line in / mic port. It has a 40
gb hard drive so memory is not an issue.

I was curious, as I am at a lack of finding info on the main website,
Which rockbox-able mp3 players support either MIC or Line-in
recording, via a 3.5mm plug?

I am looking for something to do some covert concert recording, and
mp3 players arent inherantly "recording" devices as would be checked
by door people, atleast i dont think theyd check. Also, if at all
possible, something that both records and can take extra memory
(SD/MicroSD) would be preferred. I just wish my Sansa did mic-in via
3.5mm.
