It sounds like your itrip cradle uses the 'upload picture' function to
display the radio frequency on the ipod screen - as far as I know this
feature is not (yet?) implemented in Rockbox, so the screen will not update
to show the radio details. The itrip may continue to work however. Of
course, installing rockbox is not a "one-way" operation - you can still boot
to the original Apple operating system and use your ipod as before.

Also, as the accessory protocol is still "work in progress", it would be
great if you can try your itrip cradle with Rockbox and let us know which
features work and which do not - for example, if your cradle features
buttons to change track, volume, etc, do these work correctly in Rockbox.
