According to the documentation, I should be able to change the directory for recordings (section 8.8 in the manual).

This option is not present in the latest build and somehow the root directory is used. Luckily, the 'clear recording directory' option (not mentioned in the manual) does not work <g>.

the manual is outdated as that recently changed. Use the context menu on any folder.

This is not for support, please use the support channels for such questions.

Rockbox has a context menu in most places. To reach it hold Select on an item. In your case, do that while hovering a folder in the file browser. The manual explains what the context menu is ...
