Sounds like you should ask Santa to bring you a Neo. It already does all
that, and has a remote(s). Wired for the car, and IR for the home. It can
be further modified all sorts of ways. You can get firmware and a chip for
$30 to make it talk too. (nice for the car)

I mean don't get me wrong, Archos/Rockbox is still the ultimate hand-held
setup as far as I am concerned, but the Neo is the ultimate out of hand
setup. For $380 you get 20GB Neo, car bay, car control panel, FM
modulator/RCA out, Home stereo dock, IR remote USB connections and
installation wires.
