Correct, use the jack labeled "Ear". For most applications it is
recommended to set all the audio settings to zero or flat and use the
equalizer/tone controls of the connected device. (config files are great
for this!) To get the levels right, select other inputs to your amplifier
and adjust volume on the Archos until the level sounds about the same.
