I'll second the recomendation for Total Recorder.
It's not free, but it's only $12 (including free
lifetime upgrades) for the "Standard Edition" which is
a very professional and full featured application that
has everything you will need to do scheduled
recordings either from your sound card input or
directly from an application receiving an internet
stream, recording directly to MP3 format using the
Lame encoder (or other encoder of your choice) + many
