When you are in the recording screen you can move up and down through some
options and left and right to change the value.

Sorry, I don't have mine to hand, but we DO have a blind friendly manual
that will certainly help (or maybe some kind soul will post)

The problem is we cannot record and playback at the same time and what with
having limited buffer space and other considerations, sadly speech is just
not a simple task in the record screen.

I'm sure a good lateral thinker could come up with a solution, but as
sigthed users do not suffer the problem, I guess the technique would be
best devised by those who would benefit from it the most.

I'm 99% sure the top option is gain ...so, press up three or four times and
then right lots to increase the gain ...(hope I remember well)
