To choose a new song to play, you need to use the Select button, not the Play button. Navigate to the file that you want to play, and then hit Select. (Alternately, you can hit the right arrow. Either one will accomplish the same thing in the file browser.) Note that it may take Rockbox a couple of seconds to buffer the newly-selected song. Do not hit the Play button during that time, or you will end up putting the player into pause mode.
