We actually prefer "contextual quoting". That means "removing parts of
the previous message if you aren't responding to specifically those
parts, and inserting your responses in immediately after the pieces
you're responding to."

A client that defaults to top posting actually works quite well for
this, because then you can move down through the message, deleting what
you don't need, and adding a few newlines and typing a response after
the pieces that you are responding to. By the time you reach the end of
the message you've deleted everything except the exact bits you're
replying to.
