Ah yes, the "everywhere I've been they do it this way, so surely this
must be the universal constant" argument. Is it so impossible to accept
that the owners of the list are asking for it to be done a specific way,
and that it is considered good form when in someone else's home to
follow their rules for behaviour while there?

There are reasons to prefer it this way. Among other things, it keeps
the emails smaller if unnecessary additional information is trimmed.
It's also easier to follow which replies are to which exact points.
There's no reason to even include the previous email if it's after your
response - anyone on the list or reading through the archives has access
to the previous email anyway. It's basically pointless spam content
unless you're going to trim it to provide context.
