Where it says "Uninstall RockBox" is selectable but states, "This will leave the bootloader in place (you need to remove it manually)" and I couldn't find a manual method on removing it and restoring the Sansa version. Sansa Updater should be able to achieve this (I'd be surprised if it couldn't), or failing that simply placing an un-modified firmware file at the root of the device and rebooting should work.
