Details

The manual still documents the Time & Date menu being under the root level System menu (moved r30776).

I've attached a go at a hacked up version, it'll need looking at though as I have no LaTeX skills.

I can't test since I don't have the latex compiler installed. Does it produce a working PDF?

I've tested it on a target with a RTC and without, the resulting PDF looks good in both cases.
